The secrets of wine pairing

On many occasions when we talk about pairing, we get out of the way and we do not know what the wine pairing is. In this article, we ask Cecilia Guedes, sommelier of our restaurant with a Michelin star, Roca Moo, which are the keys to do a good wine pairing.

What should be taken into account when combining a wine with a dish?

Combining a wine and a dish has no rules, it depends on many things, but first you have to decide what type of pairing you want to make. The pairings can be done in different ways: by contrast, by similarity, by geographical proximity, among others.

In Roca Moo as in Celler de Can Roca, many times we create a dish from a wine and then the pairing is done alone. For example the Oyster to the Riesling, the Pigeon with Palo Cortado, the Lamb to the Cariñena, etc.

What is the key aspect of harmonizing a wine with a particular dish?

Harmonization will always seek a fusion of flavors, sensations and textures.

With how many types of wines does Roca Moo count?

500 references between reds and whites of the producers that most excite us in Catalonia and the rest of Spain, highlighting Priorat, Rioja and Ribera del Duero. We also have almost all Cava and Champagne producers in our winery.

In our restaurant you can see the passion for the wines of Jerez de la Frontera or Sanlúcar de Barrameda, as we have an extensive reference of Manzanillas, Finos, Palos Cortados, Olorosos, etc.

In addition, part of the winery is dedicated to the wines of Germany, the Riesling, which are one of the passions of Josep Roca.

What are the main characteristics that characterize a wine typical of the Roca Moo?

Above all, we value the respect that has the winemaker when it comes to making their wine, the respect to the land, to the vineyard, as it vinifies until the final moment of bottling its wine.

What is the Roca Moo wine most appreciated by diners?

We have an extensive wine list where it would be impossible to choose just one… each wine has its value by its peculiarity, by the region where it is or by the producer. We have great jewels like L’ermita de Alvaro Palacios, Petrus, Château Mouton Rothschild, among others.
